New York Cheesecake

Ingredients

Crust

  • 200 g digestive biscuits

  • 100 g melted butter

  • 2 tbsp sugar

Filling

  • 900 g cream cheese (softened)

  • 200 g sugar

  • 3 large eggs

  • 200 ml sour cream

  • 1 tbsp vanilla extract

  • 1 tbsp lemon juice

  • 2 tbsp flour

Instructions

  1. Preheat oven
    Set oven to 160°C (325°F).

  2. Make crust
    Crush biscuits into fine crumbs. Mix with melted butter and sugar.

  3. Press crust
    Press mixture firmly into the bottom of a springform pan.

  4. Bake crust
    Bake for 10 minutes, then let cool.

  5. Prepare filling
    Beat cream cheese until smooth. Add sugar and mix well.

  6. Add eggs
    Add eggs one at a time, mixing slowly to avoid air bubbles.

  7. Add remaining ingredients
    Mix in sour cream, vanilla, lemon juice, and flour.

  8. Pour filling
    Pour batter over the crust.

  9. Bake cheesecake
    Bake for 55–65 minutes until the center is slightly jiggly.

  10. Cool slowly
    Turn off oven and leave door slightly open for 1 hour.

  11. Chill
    Refrigerate at least 6 hours before serving.
