500 g mushrooms (sliced)

1 onion (chopped)

3 tbsp butter

2 garlic cloves (minced)

3 tbsp flour

4 cups vegetable broth

1 cup heavy cream

Salt and pepper to taste

Fresh parsley for garnish
Instructions

Cook mushrooms
Melt butter in a large pot and sauté mushrooms until browned. -
Add onion and garlic
Cook until softened. -
Add flour
Stir in flour and cook for 1 minute. -
Add broth
Slowly pour vegetable broth while stirring. -
Simmer
Let soup cook for 10 minutes. -
Blend (optional)
Blend half the soup for a creamy texture. -
Add cream
Stir in heavy cream. -
Season
Add salt and pepper. -
Simmer again
Cook for another 5 minutes. -
Serve
Garnish with fresh parsley.
