Creamy Mushroom Soup

Ingredients

  • 500 g mushrooms (sliced)

  • 1 onion (chopped)

  • 3 tbsp butter

  • 2 garlic cloves (minced)

  • 3 tbsp flour

  • 4 cups vegetable broth

  • 1 cup heavy cream

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

  1. Cook mushrooms
    Melt butter in a large pot and sauté mushrooms until browned.

  2. Add onion and garlic
    Cook until softened.

  3. Add flour
    Stir in flour and cook for 1 minute.

  4. Add broth
    Slowly pour vegetable broth while stirring.

  5. Simmer
    Let soup cook for 10 minutes.

  6. Blend (optional)
    Blend half the soup for a creamy texture.

  7. Add cream
    Stir in heavy cream.

  8. Season
    Add salt and pepper.

  9. Simmer again
    Cook for another 5 minutes.

  10. Serve
    Garnish with fresh parsley.
